You Will Need… 

Half can of a 540 mL can of black beans – drained and rinsed

Half can of a 540 mL can of red kidney beans – drained and rinsed

2 Tbsp olive oil

1-2 large cloves of garlic – minced

1/2 medium yellow onion – diced

1 small yellow or orange – diced

2 cups of your favourite salsa

1 avocado

1 Tbsp each of garlic powder, cumin, red pepper flakes, black pepper

Salt to taste

Prepare the burrito filling 

  1. Add olive oil to a medium high pan, when warm add in onions and chopped garlic and let cook until soft
  2. Add diced peppers and cook for 1 minute, then add drain and rinsed canned beans, followed by the spices – cook for 1 minute
  3. Add salsa, mix and let simmer for 1-2 minutes
  4. Serve on your favourite rice, top with cilantro, diced avocado or guacamole and fresh squeezed lime juice

Meal Prep Tip: You can double this recipe and freeze the extra for quick meals later in the week or month. Enjoy with rice, as a burrito filling or with eggs for breakfast.
